Honey is one of those luxury items we have been collecting, well since probably the earliest days of man. Nature has been amazingly kind to humans over the years and has showered us with delicious tasting foods and delicacies of all sorts. Us humans being the meddling sort that we are, try to reproduce nature’s wonders in laboratories, make it cheaper, and mass produce it so most of humanity can over-consume these once luxuries.
SO WHAT’S THE DIFFERENCE BETWEEN THE CHEAP AND EXPENSIVE STUFF ANYWAYS??
wELL, it turns out, a lot…
A good thing to keep in mind is…if it seems too good to be true, it probably is. Real, raw honey should be expensive. It takes a lot of bees a lot of work to make one jar- so when we humans get our hands on said jar, we should treat it like gold. We shouldn’t be consuming tablespoon after tablespoon. We should be conscious of what we are using, what the earth has to go through to get that product to us, and what happens to whatever container it is in once we are done with it.
Here are some health benefits of real, raw honey:

- rich in antiseptic and antioxidant properties– antiseptics prevent growth of bacteria and antioxidants protect against effects of free radicals. **free radicals are molecules produced when your body breaks down food or is exposed to tobacco smoke and radiation. Free radicals destroy cell membranes and make cells vulnerable to decay and pathogens… basically organic honey helps us protect ourselves from illness

Regular Honey can consist of:
- regular crops/fields/ forests which may have been sprayed with pesticides or had synthetically fertilized lands
- bees’ treated with antibiotics (such as Ciprofloxacin in China’s honey) and winter nourishment with sugar, or low cost syrup (cane, corn, beet, rice, tapioca or others fruit syrup).
- hives made of non-organic materials, which may have pests, mice, spiders and be cleaned with non-organic substances
- the extracted honey is pasteurized and filtered which implies heating at high temperatures, destroys enzymes and increasing the level of toxins.

Organic, Raw Honey consists of:

- is not heated above 95 degrees F / 35 degrees C (if extraction implies heating), the normal temperatures of the bee hive. This helps keep all of the nutrients in the honey
- strained (to remove larger particles) – if wanted.

- stored in organic recipients (light brown/amber glass jars).
When purchasing any food item, including honey, it is best to get it as close to the source as possible. This means it would be ideal to get to know the farming community around the town you live in. If you live in a city, start asking questions at the farmers markets and see where the food is coming from. We should have relationships with people who are feeding us, not just buying things blindly off of supermarket shelves.
Realistically, to get to know the source of where your food is coming from and who is producing it will take some time these days. In the meantime, try at least to buy things that say local and organic if you have to buy from a supermarket. Try to buy in glass instead of plastic, as this is better for your health and the environment. Try to be as mindful as you can when consuming. Start asking questions, start getting information and your health and the Bees will thank you.
It may be a little more expensive to buy organic than not, but the healthier you become, the more money you end up saving. I will have more posts on this topic in the future.
